Lately
sweet summer melons have become a favorite in my smoothie creations. I picked up a golden watermelon at my local
farmers market and it was a great compliment to the honeydew and
cantaloupe. If you can’t find a golden
watermelon a regular watermelon would work as well.
Yield 2
large 32 oz servings or 4 small 16 oz servings
1 c
Honeydew Melon
1 c
Cantaloupe
1 c Golden
Watermelon
1 c
Raspberries, frozen
½ Block
Silken Tofu “Firm”, preferably Mori-Nu
2 c
Spinach
3 c
Vanilla Soy Milk
1 c Carrot
Juice
2 tb Honey
Flavored Agave
2 tb Chia
Seed
- Place the
melon, raspberries and spinach in the blender.
- Add the
soy milk and carrot juice.
- Add the
agave, being careful to pour in the middle so it doesn’t get stuck on the sides
of the blender.
- Blend
well. Remove some of the smoothie to
make room for the tofu and split the part removed from the blender accordingly.
- Use your hand to
crush up the tofu as you place it in the blender.
- Blend again and
split amongst your servings accordingly.
Add the chia seeds, stir and enjoy!
